超声波辅助提取紫甘蓝天然色素及性质研究
摘要:以食用紫甘蓝菜为原料,用蒸馏水作浸提剂,采用超声波辅助水浸提的方法研究紫甘蓝色素提取工艺,并对其热稳定性,对光的稳定性及金属离子对色素的影响等。实验结果表明提取紫甘蓝色素的最佳工艺条件是:以蒸馏水为浸提剂,液固比为40:1(mL:g), pH为7,超声辅助功率80%,浸提时间50min,此条件下蓝色素的提取率达18.2%,且比传统工艺大大缩短了浸提时间。对其性质的分析表明:紫甘蓝色素对光的稳定性较好;在室温下亦很稳定,温度升高其降解速度加快;K+、Na+、Cu2+、Mg2+、Zn2+、Ga2+等离子对色素基本无影响,Fe3+、Al3+、Sn2+等对其稳定性有一定的影响。
