主料:鸭 1只

做法步骤

1、我们把料酒3勺,生抽4勺,老抽2勺,盐,黑胡椒和白胡椒,还有蚝油2勺,白糖2勺,洋葱丝这些辅料搅拌均匀后,用手涂抹在生鸭子上,放在保鲜袋后装冰箱里放五小时入味。

2、5小时后我们把水烧开,能没过鸭子就行,然后把鸭子放在热水里几秒后捞出,再用吹风机吹干。

3、准备两勺蜂蜜,1勺料酒,2勺米醋拌匀备用,这是刷烤鸭的料。

4、等待刷料中,别急!

5、开始刷到均匀,要有耐心多刷几遍入味。

6、然后放入烤箱,180℃烤1小时,中间看效果,如果太嫩了可以调高一些,如果颜色不深的话就继续,根据烤箱来定。

7、烤好的鸭子效果不错的~

8、烤鸭子后,有时间可以做卷饼了,我买的是饺子皮,2块钱的,大概20张。

9、每层涂橄榄油,避免粘上。

10、用擀面杖擀成薄皮,然后放入蒸屉蒸熟,需要25分钟。

11、把甜面酱、生抽2勺和白糖2勺搅拌,淀粉加水100克搅匀,熬出的卷烤鸭酱比较粘稠即可。

12、饼薄薄的,看着就很有食欲。

13、再切些黄瓜条葱丝。

14、卷葱和黄瓜卷蘸酱卷起来吃,很美味!

小贴士

北京烤鸭制作,虽然有点麻烦,但是吃起来真的很好吃。薄饼也可以自己做,重要的是一定要擀的薄薄的,蒸熟才行。
