【广式肠粉及汤的做法】:

汤料的前提
蒜 +葱头(是那种比洋葱小的葱)切碎(必须是手工切碎).
用菜籽油从慢火到温火慢煎 ,煎到可以闻到香味(细碎的蒜沫变金黄色了就得注意了)就马上倒进你要装的盆里.
汤的料底
香菇(要好的大个的)切薄片,油炸
鱿鱼(什么鱿鱼都好,但千万不要买人家切好的.便宜的)剪丝
盐 . 味精 . 鸡精 . 酱油(想要有豆香或是金黄色的汤就得加)生粉(番薯淀粉也可以)
. 准备煮汤的水(你所需要的分量)
1,先煮水把原本煎好的蒜油跟蒜油底适量放进去煮同时把炸好的香菇适量放进去一起煮,煮
到软了下猪油(适量)再把鱿鱼适量放进去煮,
2.鱿鱼放进去煮后.马上进行作料的调味.鸡精少量,味精应该多点会保存味.盐的分量要看天气下
,酱油就不用多说了吧.
3.味道调好后,拌好粉水(即生粉,番薯淀粉)如果要够粘就粉必须多.(正常的粉汤都是很粘的)
4.在煮开后. 倒入粉水.搅拌 , 眼看 汤里带气泡了带粘性了熄火.再搅拌几次.无须多次.搅拌
是为了不让粉独立凝固.可以充分散开
原本煎好的蒜油是还有用处的, 你把肠粉起炉装盘子后勺上一小勺倒上去再倒粉汤或是先放粉
