soubise sauce-sauce soubise. yield:approximately 1 quart.combine 1 pound(500 grams)finely cut and blanched onion, 7ounces(200 grams) blanched rice, approximately 2 cups(5 deciliters)milk or white stock, 1 bay leaf, 1 clove, and seasoning. cook covered in a water bath in the oven. strain.thicken with egg yolks and cream.(this sauce is served with lamb mutton roasts,saddle of veal or mutton,and lamb cutlets)
