1、我的理解是：more of the和more这两种结构的差别在于语气的不同，如果用more，语气重点在于突出产生了更多的某种物质，如果more of the，与其重点在于突出更多产生的是什么东西。当然，我觉得，这里用more也是可以的，但是考研英语的文章一般表达比较专业和严谨，所以会这样给出。
2、这也就是说，比较的是the trigger chemicals的量，属于比较状语从句，than后面的那个do所替代的部分就是produce the trigger chemicals，而这个与主语中的位于相同，可以用do代替，从而倒装，也是一种省略以免重复表述缀余。完整的说法应该是：causing females under stress to produce more of the trigger chemicals than males produce trigger chemicals under the same conditions.
