备好材料,虾越新鲜越好,最好是活虾,个头大一点,我用的是对虾。把鲜虾去壳去虾线、洗干净。葱、芹菜切碎,鸡蛋只用蛋清。

把处理好的虾肉剁成泥。

把剁好的虾肉放在碗里,加少许葱末、鸡蛋清、料酒、一勺盐,用筷子搅拌均匀。

烧一锅水,放一点生姜、料酒。等水烧开了,把虾丸用勺子团成一个个球,放进水里。煮出的白沫就把它撇掉,加少许盐,再烧十来分钟左右。
