制作松花蛋需要很多原料,只用草木灰是不行的。
主要材料:鸡蛋或鸭蛋100个
配料:盐3两、茶少许、生石灰3两、纯碱3两、草木灰七份、稻壳适量(或用高粱壳代替)、清水适量

先将纯碱和食盐放入小瓷缸中,冲入开水,待二者充分溶解后,再分批加入生石灰和柴草灰,当生石灰全部“化”开时,料灰就配制好了。

传统方法制作的皮蛋以鸭蛋为多,但鸡蛋与鸭蛋相比,鸡蛋蛋壳较薄,厚度不均匀,毛细孔的粗细也不同,所以用鸡蛋做的皮蛋品质差异较大,稳定度也不够。又因加工皮蛋要用石灰和纯碱等原料,鸡蛋白凝固的酸碱度(PH值)的范围太窄,稍有不慎,蛋白就会水化,所以技术要求较高。
